Service Description

For those who have completed our Build Your Skills course (or are ready for a challenge), this class dives deeper into advanced techniques and methods that elevate everyday cooking. Each week focuses on a new culinary skill, with multiple recipes designed to give you hands-on practice and confidence in the kitchen — all while enjoying plenty of delicious food along the way. Prior participation in Build Your Skills is helpful but not required. However, we do strongly recommend taking our Knife Skills class beforehand, as it will make your experience even more rewarding. This is a progressive course, so please make sure you’ll be able to attend all four weeks before registration. Students are asked to bring a chef’s knife to the first class (8-inch or larger, non-serrated; example shown below). House knives will be available for use as well. A professional chef’s knife is available for purchase and may be added to your registration at checkout. 3/9 MENU: Advanced Knife Skills, Vegetable Cookery, and Soups: French Onion Soup; Clam Chowder; Sauteed Fluted Mushrooms; Zucchini Cakes; Tourneed Potatoes in Compound Butter 3/16 MENU: Starches, Charcuterie, and Meat Fabrication - Potato Gnocchi; Spaetzle; Bratwurst Sausage; Stuffed and Tied Pork Loin with Pan Sauce 3/30 MENU: Chicken and Fish Butchery and Cookery, Advanced Sauces - Chicken Fabrication; Fish Fabrication; Chicken Thigh with Chasseur Sauce. 4/6 MENU: Baking - Souffle & Crème Anglaise; Pate a Choux and Pastry Cream; Puff Pastry. Course contains dairy, gluten, eggs, fish, shellfish, tree nuts, meat, pork, alcohol BYOB: We're a BYOB venue! If you'd like to pick up some beer or wine on your way, we're conveniently close to a few stores. State Line Liquor Store is right before the turn to Springhill Farm Rd if you're coming from Pineville Matthews Rd, and Frugal MacDougal's is right before the turn to Springhill Farm Rd if you're coming from I-77. Glassware and openers are provided free of charge! 1 WEEK NOTICE: Full refund or future class credit. (ALL VALENTINE'S CLASSES AND CAMPS ARE 2 WEEK NOTICE TO RECEIVE REFUND) 72 HOURS NOTICE: You may receive a future class credit that may only be rescheduled once. If you cannot make the new class, you may give your seat to someone else to attend in your place, but no further credit will be issued. LESS THAN 72 HOURS NOTICE: You may give your seat to someone to attend in your place, but no credit will be given. Please just have your stand-in give your name at the door. NO SHOW: If you do not call or e-mail prior to the class, no refund or credit will be given. Please remember that the classes are events like a concert or a play, not an appointment to be rescheduled.
